SHRIMPS IN TOMATO RICE
Räkor i tomatris
½ chopped green bell pepper
1 to 2 crushed garlic cloves
1 cup long-grained rice
1 ¼ cup chicken bouillon
1 can crushed tomatoes, 14 oz
1 teaspoon dried oregano
1 teaspoon salt
½ teaspoon white pepper
2 lbs un-peeled shrimps or 14 oz peeled
lemon wedges
Fry the bacon until crisp in a frying pan, drain on paper towels and cut it in pieces. Pour 2 tbsps of the bacon fat in a saucepan and sizzle onion, bell pepper and garlic until everything is tender. Add the rice and stir. Sizzle the mixture for a few minutes. Add bouillon, tomatoes and spices, cover and boil for about 20 minutes.

An easy-to-make festive dish or a nice supper dish.
The rice gets its taste from the bouillon and tomatoes.

Blend in the peeled shrimps and
bacon pieces and flavour more if needed. Heat up the rice so that the shrimps
are heated through. Put it in a bowl and decorate with parsley and lemon
wedges.
Serve with bread and a salad, e.g.
tomato onion salad.
