JUICY MEAT LOAF

1 cup milk
1½ teaspoons salt
black pepper
1/3 cup finely chopped onion
1 tablespoon oil
1 large grated carrot
1 egg
3 tablespoons mustard
Let the breadcrumbs swell in the milk for about 10 minutes. Put the ground meat in a bowl and add salt and pepper. Sizzle the onion in the oil until tender, about 5 minutes. Stir the breadcrumb mixture, onion, grated carrots, egg and 1 tbsp mustard and blend well.

A delicious meat loaf, flavoured with mustard and
carrots.

1 lb ground meat, 50% pork, 50% beef
1/3 cup dried breadcrumbs1 cup milk
1½ teaspoons salt
black pepper

bell pepper in ringsLet the breadcrumbs swell in the milk for about 10 minutes. Put the ground meat in a bowl and add salt and pepper. Sizzle the onion in the oil until tender, about 5 minutes. Stir the breadcrumb mixture, onion, grated carrots, egg and 1 tbsp mustard and blend well.
Transfer the ground meat to an oven-proof dish and
shape to a length. Spread remaining mustard over the ground meat and bake in
the oven at 350F for about 50 minutes or until done.
Take it out of the oven and leave to rest for about
5 minutes before slicing it. Decorate with bell pepper rings.
Serve with boiled potatoes, a salad and extra
mustard.
