SWEET PEAR SCONES
Söta päronscones
¼ cup light-coloured muscovado sugar
1 ¾ oz diced butter or margarine
1 lightly beaten egg
2 lightly cooked, mashed, large, firm pears
Heat the oven to 390F. Line a baking plate with baking paper.

Everyone loves a good scone and these pear scones
are easy to bake – perfect with tea or as an in-between snack.
12 scones
2 ¾ cups fine wheat flour
2 teaspoons baking powder¼ cup light-coloured muscovado sugar
1 ¾ oz diced butter or margarine
1 lightly beaten egg
2 lightly cooked, mashed, large, firm pears
Heat the oven to 390F. Line a baking plate with baking paper.
Sift the flour into a bowl and blend with baking
powder and muscovado sugar. Add the fat and use your fingers to make a crumble
dough.
Mix pears and egg and blend this into the flour
mixture. Quickly work the dough together and turn it out onto a floured work
surface. Roll out to an approx ¾ inch thick plate. Use a round cookie cutter,
diameter approx 1 ¼ inch, or a glass, and take out 12 round pieces of the
dough. Put them on the baking plate.
Bake the scones for about 15 minutes until they have
risen and turned golden. Take out of the oven and serve warm with just butter
or with marmalade, jam or honey.
