SWISS-STYLE HAM
Schweizerskinka

1 tablespoon butter or margarine
1½ to 2 tablespoons mustard
4 slices smoked ham
4 thick slices of cheese, strong and ripe
¼ cup white wine or meat bouillon
¼ cup whipping cream
Flavour the sliced meat with salt and pepper. Melt fat in a frying pan and brown them on both sides until coloured. Put the meat in an oven-proof dish and spread the mustard on the slices. Put a slice of smoked ham and a slice of cheese on each and pour the wine in the pan.

Cheese-baked ham slices flavoured with mustard are
always delicious. An easy-to-make dish, excellent to serve with boiled potatoes
and a salad.

4 slices ham or shoulder of pork, approx 1 lb
½ teaspoon saltwhite pepper
1 tablespoon butter or margarine

Bake in the upper part of the oven at 440 to 480F for 12 to 15 minutes. Dilute the juices with cream and flavour to taste
with pepper. Decorate with a parsley sprig and serve.
