THE FARMER’S WIFE’S STEW
Bondmorans köttgryta

Prime rib is an excellent piece of meat for hearty stews. Make sure you let it simmer until it’s really tender. Boiled potatoes or rice and a salad are good accompaniments to this one.

4 servings

1 to 1 1/3 lbs boneless prime rib
1 onion
1 piece of leek, 1 oz
1 carrot
1 green and 1 red bell pepper
1 to 2 tablespoons butter or margarine
salt, pepper
1 cup water
1 meat bouillon cube
1/3 cup red wine
1 teaspoon vinegar
1 can whole tomatoes, 14 oz
2 tablespoons chili sauce

Cut the meat in even-sized cubes. Chop onion and leek. Peel the carrot and trim the sweet peppers. Finely dice them. Melt the fat in a frying pot and brown the meat until coloured. Flavour with salt and pepper, add the onion and sizzle for a few minutes. Add water, bouillon cube, wine and vinegar, cover and simmer for 30 minutes.

Add leek, carrot, sweet peppers, tomatoes and chili sauce and continue simmering for about 15 minutes or until the meat is tender. Flavour to taste with salt and pepper and serve.
