Apple-filled loin of pork - Äppelfylld karré

APPLE-FILLED LOIN OF PORK
Äppelfylld karré


A very appreciated dish on the dinner table. The apple onion filling gives a wonderful taste to the meat and makes it extra juicy.


4 servings


1 lb 8 oz boneless loin of pork
1 teaspoon salt
ground ginger
ground cloves


Filling:
1 piece, approx 2 inches, finely chopped leek
2 green apples, cored and finely chopped
2 tablespoons butter or margarine
2 tablespoons brown sugar
1 tablespoon mustard


Decoration:
fried apple slices
parsley




Make 6 to 7 cuts, approx 1 inch deep, in the meat with a sharp knife. Rub with salt, ginger and cloves. Put the meat in an oven-proof dish. Mix together the ingredients for the filling, stuff it into the cuts in the meat and put remaining filling around it in the dish. Bake in the oven at 350F for 1 ¼ to 1½ hours or until the meat is done. Cover with aluminum foil and leave it for about 15 minutes.


Slice the meat and transfer to a serving plate. Put the filling around it and pour the gravy over the meat. Decorate with fried, soft apple slices and parsley.


Serve with boiled potatoes and green beans or broccoli and a green salad.
