APPLE PUDDING WITH CIDER SAUCE
Äppelpudding med cidersås
ground nutmeg
4 eggs
1/3 cup sugar
2/3 cup apple juice
1½ tablespoons flour
1 to 1½ tablespoons treacle/molasses
fresh strawberries or apple slices
Peel and core the apples and cut them in pieces. Boil them in cider for about 5 minutes, drain them and save the liquid. Mash the apples in a mixer or food processor and flavour with nutmeg.

4 apples
1 ¼ to 1 ¾ cups apple ciderground nutmeg

Cider sauce:
2/3 cup apple liquid2/3 cup apple juice
1½ tablespoons flour
1 to 1½ tablespoons treacle/molasses
Decoration:
lemon balmfresh strawberries or apple slices
Peel and core the apples and cut them in pieces. Boil them in cider for about 5 minutes, drain them and save the liquid. Mash the apples in a mixer or food processor and flavour with nutmeg.
Beat eggs and sugar until fluffy and mix it into the
apple mash. Pour this in a greased, oven-proof dish and bake in the middle of
the oven at 350F for about 30 minutes.
Sauce:
Mix apple liquid and apple juice in a saucepan. Beat
in the flour and treacle and boil for a few minutes.
Serve the apple pudding decorated with lemon balm,
strawberries or apple slices and serve the sauce separately.
