BAKED POTATOES WITH GROUND MEAT MIX
Bakad potatis med färsröra
½ green bell pepper
4 tablespoons butter or margarine
7 oz ground beef
1 tablespoon tomato paste
1 to 2 crushed garlic cloves
1 teaspoon dried marjoram
1 teaspoon salt
white pepper
Scrub the potatoes and wipe them off. Cut an X in the skin with a knife and bake them in the middle of the oven at 390F for 45 to 55 minutes.

Baked potatoes filled with a lovely mix of ground
meat are both filling and delicious. The ground beef can be substituted with
sausages or left-over meat.
4 servings
4 large potatoes
Filling:
½ onion½ green bell pepper
4 tablespoons butter or margarine
7 oz ground beef
1 tablespoon tomato paste
1 to 2 crushed garlic cloves
1 teaspoon dried marjoram
1 teaspoon salt
white pepper
Scrub the potatoes and wipe them off. Cut an X in the skin with a knife and bake them in the middle of the oven at 390F for 45 to 55 minutes.
Chop onion and bell pepper for the filling. Melt 1 tablespoon fat in a frying pan and sauté the onion until tender. Blend in the ground
beef and brown until coloured. Add sweet pepper and tomato purée and sizzle it
all, covered with a lid, for about 10 minutes.
Cut a lid off each potato and scoop them out. Mix
half of the potato pulp with remaining fat, then blend this into the beef mix
and flavour with garlic, marjoram, salt and pepper. Fill the potatoes with the
beef mix and put them back in the oven (same temperature) for about 10 minutes
or until really hot. You can sprinkle with some grated cheese before baking if
you wish.
