BANANA-FILLED MOCHA CAKE
Bananfylld mockatårta

A lovely mocha cake filled with banana and butter creme. From one cake you get 12 to 14 pieces.

1 cake

¾ cup sugar
1/3 cup brown sugar
3½ oz butter or margarine
3 eggs
1 ¼ cups flour
2 tablespoons cocoa
1 tablespoon vanilla sugar
1 teaspoon baking powder
1/3 cup strong coffee

Filling:
5 oz butter or margarine
1 ¼ cups powdered sugar
4 tablespoons cocoa
1 tablespoon vanilla sugar
1½ teaspoons powdered coffee
4 bananas

Decoration:
pecans or walnuts


Stir sugar, brown sugar and fat until fluffy. Add the eggs, one by one. Mix flour, cocoa, vanilla sugar and baking powder in a bowl and turn this into the batter, alternating with the coffee. Pour in a greased, floured cake pan, 6 cups. Bake in the lower part of the oven at 350F for about 40 minutes. Allow to cool in the pan and then unmould onto a rack.

Stir fat and powdered sugar until fluffy for the filling. Flavour with cocoa, vanilla sugar and powdered coffee. Mash the bananas.

Split the cake in 3 layers, spread a thin layer of the chocolate crème on them and put banana mash on top. Put the layers together and spread remaining chocolate crème on top of the cake. Decorate with nuts and serve.
