Cheese squares - Ostrutor

CHEESE SQUARES
Ostrutor

Cheese squares are excellent on the breakfast tray. If you want to serve them with soup or a salad you can add some peperoni to the dough, then you get a strongly flavoured bread.

12 squares

1 ¾ oz fresh yeast
2 tablespoons water
2½ cups flour
2 teaspoons baking powder
1 teaspoon sugar
½ teaspoon salt
3½ oz butter or margarine
1 cup cream, 15% fat
1 cup grated cheese

For brushing:
1 tablespoon melted butter or margarine
paprika


Crumble the yeast in a bowl and dissolve it in lukewarm water, 37°C/body heat. Mix flour, baking powder, sugar and salt in a bowl. Finely divide the fat in the flour mixture until crumbly. Blend in cream, cheese and yeast and work the dough together. Leave to prove for about 20 minutes.

Turn the dough up onto a floured work surface and work until smooth and pliable. Roll it out to a rectangle, about ½ inch thick. Transfer to a greased baking plate (or use baking paper) and cut it in 12 squares. Brush with melted fat and sprinkle with some paprika. Bake in the middle of the oven at 440F for about 15 minutes. Allow to cool on a rack.
