MERINGUE PIE WITH ICE CREAM

2 tablespoons sugar
3½ oz butter or margarine
4 to 6 cups strawberry ice cream
1/3 cup sugar
Pie shell:
Chop together flour, sugar and fat. Work the dough together and press it out in a pie pan. Leave for 15 minutes, then bake at 350F for 15 minutes. Allow to cool completely. Spread out the jam in the pie shell.

This meringue pie is a favourite among both grownups
and children. It is filled with ice cream and strawberry jam, covered with
meringue and then baked in the oven.
1 pie, approx 8 servings
Pie dough:
¾ cup flour2 tablespoons sugar

Filling:
¾ cup strawberry jam4 to 6 cups strawberry ice cream
Meringue:
3 egg whites1/3 cup sugar

Let the ice cream soften slightly in room
temperature and beat it until smooth and pliable with an electric beater.
Divide the ice cream evenly into the pie shell. Put it in the freezer while you
make the meringue.
Beat the egg whites until stiff and add the sugar
little by little, while beating vigorously. Divide the meringue over the ice
cream so that it covers the whole pie and bake it at 480 to 525F for 4
to 5 minutes and let the meringue take colour. Drizzle with strawberry jam and
serve.
You can prepare this pie in advance until baking and
store it in the freezer for several months.
