POTATO
AND VEGETABLE PAN

5 to 6 large, firm potatoes
1 large
carrot
5 oz lean, smoked pork
2 red onions
1 green bell pepper
7 oz green beans
3 tablespoons oil
½ teaspoon salt
white pepper
2 tablespoons chopped parsley
Rinse, peel and slice potatoes and carrot in thin slices. Trim the pork and finely dice it. Peel and cut the onion in thin rings. Rinse and split the sweet pepper, remove all seeds and cut in 1 cm shreds. Trim, rinse and cut the green beans in 1 cm diagonal pieces.
Heat up the oil in a large frying pan and sautée pork and onion until transparent on medium heat. Add potatoes and vegetables and let them fry with pork and onion for about 1 minute while stirring. Lower the heat, put a lid on and let it all fry for 15 to 20 minutes or until potatoes and vegetables are tender to the touch. Stir occasionally.
Take off the lid and increase the heat to highest possible. Sautée until crunchy while stirring, 3 to 4 minutes. Flavour, sprinkle with parsley and serve immediately with a crisp salad.
