What could taste better than a soup on a chilly day? Here, salami and root vegetables give a hearty flavour to the soup. But I substitute salami with another sausage as I don’t like salami …

4 servings

1 onion
3½ oz leek
2 carrots
5 oz celeriac (celery root)
1 tablespoon butter or margarine
4 cups meat or vegetable bouillon
3½ oz salami or other smoked sausage
1 crushed garlic clove
salt, pepper

Decoration:
parsley

Chop the onion and shred the leek. Peel and dice carrots and celeriac. Melt the fat in a saucepan and sizzle the onion for a few minutes. Add leek, carrots and celeriac and pour on the bouillon. Boil for 15 minutes.

Finely dice the kind of sausage you’ve chosen. Blend sausage and garlic into the soup and boil for a few minutes more. Flavour to taste with salt and pepper, sprinkle with chopped parsley and serve the soup.
