VEGETABLE SAUSAGE SOUP
Rotfruktssoppa med korv
2 carrots
5 oz celeriac (celery root)
1 tablespoon butter or margarine
4 cups meat or vegetable bouillon
3½ oz salami or other smoked sausage
1 crushed garlic clove
salt, pepper
Chop the onion and shred the leek. Peel and dice carrots and
celeriac. Melt the fat in a saucepan and sizzle the onion for a
few minutes. Add leek, carrots and celeriac and pour on the bouillon. Boil for
15 minutes.

What could taste better than a soup on a chilly day? Here, salami and root
vegetables give a hearty flavour to the soup. But I substitute salami with
another sausage as I don’t like salami …

1 onion
3½ oz leek2 carrots
5 oz celeriac (celery root)
1 tablespoon butter or margarine
4 cups meat or vegetable bouillon
3½ oz salami or other smoked sausage
1 crushed garlic clove
salt, pepper
Decoration:
parsley
Finely dice the kind of sausage you’ve chosen. Blend
sausage and garlic into the soup and boil for a few minutes more. Flavour to
taste with salt and pepper, sprinkle with chopped parsley and serve the soup.
