Steak Marsala - Biff Marsala

STEAK MARSALA
Biff Marsala

A well-cooked slice of roast beef, served with vegetables boiled in Italian Marsala wine, is a really good and festive main course. Serve with baked potatoes.

4 servings

4 slices boneless beef, e.g. roast beef, 1 to 1 1/3 lbs
1 teaspoon salt
black pepper
2 tablespoons oil
1 onion
7 oz fresh mushrooms
1 green bell pepper
2 to 3 tablespoons butter or margarine
2/3 cup Marsala wine
6 sprigs fresh thyme or 1 – 2 tsps dried thyme
salt, pepper

Flavour the meat with salt and pepper. Heat the oil and fry the meat on both sides until coloured and done to your liking. Put them on a serving plate and keep warm.

Slice onion and mushrooms and cut the bell pepper in pieces. Sizzle onion, mushrooms and sweet pepper for 5 to 10 minutes. Pour in the wine, add thyme, put the meat back in and simmer slowly for about 5 minutes. Flavour to taste with salt and pepper.

Pour the vegetable gravy over the meat and serve with baked potatoes and parsley butter, a salad and bread.

If you wish, you can substitute the Marsala wine with sherry, red wine or meat bouillon.
