Sweet chicken Marsala - Söt kyckling Marsala

SWEET CHICKEN MARSALA
Söt kyckling Marsala

Treat your family and friends to this Italian favourite. The smooth wine sauce will create compliments en masse for the cook.

4 servings

4 chicken breast fillets, each about 5 oz
1/3 cup flour
freshly ground black pepper
½ teaspoon dried oregano
2 tablespoons olive oil
2 zucchini, cut in approx ½ inch dice
2 garlic cloves
1/3 cup Marsala wine
¾ cup chicken bouillon

Place the chicken between two pieces of plastic foil and flatten them out with a club until ½ to ¾ inch thick. Mix flour, black pepper and oregano on a plate. Turn the chicken in the flour so that it’s coated on both sides, then shake off excess flour. Heat up 1 tablespoon olive oil in a large non-stick pan. Add diced zucchini, crush the garlic in the pan and brown for about 2 minutes while stirring. Take it up and set aside.

Heat up remaining oil in the pan and fry the chicken fillets for 5 minutes on each side. Take them up and keep warm. Beat in remaining flour in the juices in the pan and brown for 1 minute while stirring. Beat in wine and bouillon, little by little, bring to a boil and simmer for 3 to 4 minutes while stirring until the sauce thickens and is smooth.

Put the chicken and zucchini in the sauce and heat it up for 2 to 3 minutes before serving.
