ROAST GARLIC POTATOES
Rostad vitlökspotatis
2 crushed garlic cloves
1 teaspoon flaked salt
½ teaspoon freshly ground black pepper
Scrub and split the potatoes. Bring water to a boil in a saucepan and put in the potatoes. Put a lid on and turn off the heat. Let the potatoes draw in the warm water for 10 minutes, drain and place them on a dry kitchen towel. Let cool and dry completely.

These crisp garlic potatoes are lovely with
barbecued meat or with chicken and salad.
4 servings
2 lbs new potatoes
3 tablespoons olive oil2 crushed garlic cloves

Heat the oven to 440F. Pour 2 tablespoons
olive oil in an oven-proof dish and put it in the hot oven for about 5 minutes.
Take it out and place the potatoes with the cut side down. Bake in the oven for
about 10 minutes. Turn them over and bake for another 10 minutes until golden
on the outside and soft on the inside.
Crush the garlic in the remaining olive oil. Take
out the potatoes and pour the garlic oil over them. Turn them in the oil and
put on a serving plate. Flavour with salt and black pepper and serve.
