Cherry Cake - Körsbärskaka

CHERRY CAKE
Körsbärskaka

Serves 8

5.3 oz butter
1 teaspoon vanilla sugar
1 cup powdered sugar
2 eggs, separated
0.8 cup flour
½ teaspoon baking powder
2 cups cherries, pitted

For serving:
whipped cream


Preheat oven to 302F.

Stir room-tempered butter until soft together with vanilla sugar and half the powdered sugar. Beat egg yolks and remaining powdered sugar until fluffy. Beat in the egg yolk mixture into the butter.

Beat the egg whites until stiff. Gently stir in the flour mixed with baking powder, alternating with the egg whites, into the batter. 

Spread out the batter in a greased pie pan, diameter approx 9 inches. Distribute the cherries over the surface. Bake for 1 hour.

Sift with powdered sugar and serve slightly cooled with whipped cream.
