CHOCOLATE STRAWBERRY CAKE
Chokladkaka med jordgubbar
1 cake, 10 slices
3½ oz butter
2 eggs
0.8 cup sugar
0.4 cup flour
0.3 cup sifted cocoa
1 teaspoon vanilla sugar
Chocolate creme:
0.6 cup heavy cream
3½ oz dark chocolate
3½ oz milk chocolate
1 teaspoon vanilla sugar
Decoration:
4 cups strawberries
Preheat oven to 347F.
Melt the fat and allow to cool. Beat eggs and sugar until fluffy. Add the butter. Mix flour, vanilla sugar and cocoa and stir this into the egg batter. Pour in a greased, floured springform pan, diameter approx 8 inches. Bake for 25 minutes and allow to cool completely, so that it sets.
Chocolate creme:
Heat the cream to boiling point in a heavy-bottomed saucepan. Remove from heat and add chocolate in pieces and vanilla sugar. Stir until the chocolate has melted. Allow to cool, then pour it in a bowl and place in the fridge. Stir occasionally so that it thickens to creme consistency, i.e. rather thick and spreadable. It takes about 1 hour.
Spread the chocolate creme over the cake. Trim the strawberries and place them over the surface.
