FALU SAUSAGE WITH ROAST CABBAGE PURÉ
Stekt falukorv med rostad vitkålspuré

Serves 4

1 large red onion
butter for frying
1.1 lb Falu sausage or substitution

Roast cabbage puré:
12.3 oz cabbage
2 teaspoons rapeseed oil
1 lb 5 oz floury potatoes, 
King Edward type
0.4 cup heavy cream
0.6 cup regular milk
2 tablespoons butter
salt, pepper

For serving:
roughly ground, sweet mustard
pickled gherkin


Preheat oven to 392F.

Cabbage puré:
Cut the cabbage in pieces and mix with oil in an oven-proof pan. Roast in the middle of the oven until the cabbage is tender and nicely colored, approx 30 minutes. Mix cabbage, cream and milk to a smooth puré. Peel and boil the potatoes until tender in lightly salted water. Pour off the boiling water. Mash the potatoes, don't mix them. The starch makes them gluey. Mix cabbage puré, mashed potatoes and butter and flavor to taste with salt and pepper.

Peel and slice the onion and fry until tender in a frying pan with butter. Slice the sausage and fry on both sides in a frying pan with butter. Serve with mustard and pickled gherkin.
