FROZEN ZABAGLIONE
Frusen zabaione
Serves approx 6
5 egg yolks
½ cup sugar
0.4 cup medium sweet sherry
2 tablespoons rum, preferably Bacardi
grated zest from 1 lemon
fresh juice from 1 lemon
0.8 cup heavy cream
For serving:
fresh fruit and berries
Beat egg yolks and sugar until light and fluffy in a bowl. Add sherry. Place the bowl in a saucepan with boiling water and beat until thick, about 20 minutes. Take up the bowl and stir in the rum, lemon zest and juice. Cool the creme and beat occasionally meanwhile.
Beat the cream and gently stir it into the egg batter. Pour into a baking pan, rinsed with cold water, and put in the freezer for at least 4 to 6 hours.
Take it out about 10 minutes Before serving, unmould and decorate with fruit and berries.
