Ground Meat Patties with Bacon and Mustard Sauce - Baconbiffar med senapssås

GROUND MEAT PATTIES WITH BACON
AND MUSTARD SAUCE
Baconbiffar med senapssås

Serves 4

1.1 lb ground meat (beef + pork or 
what you prefer)
0.3 cup dried breadcrumbs
0.6 cup regular milk
4 anchovy fillets
1 egg
0.4 cup chopped parsley
salt, pepper
5 oz streaky bacon, sliced
1 tablespoon butter 

Sauce:
0.8 cup water
0.8 cup heavy cream
1 tablespoon concentrated veal fond
1 tablespoon Dijon mustard
1 tablespoon sweet mustard
2 tablespoons Maizena

Decoration:
parsley

For serving:
potatoes
sugarsnaps


Mix breadcrumbs and milk and swell for 5 minutes. Add ground meat, chopped anchovies, egg, parsley, salt and pepper. Work to a smooth mixture and shape to 8 patties. Wrap a slice of bacon around each. Fry the patties in butter in a frying pan until nicely colored. Transfer to a wide, shallow saucepan.

Pour the water in the pain and bring to a boil. Add cream, fond and all mustard. Bring to a boil, thicken with Maizena stirred with some cold water and boil for a couple of minutes. Flavor to taste with salt and pepper and pour the sauce over the patties.

Simmer slowly for about 15 minutes until the patties are cooked through. Decorate with parsley. Serve with roast potatoes and sugarsnaps.
