JUICY MEAT LOAF WITH BACON
AND LINGONBERRIES
Saftig köttfärslimpa med bacon och lingon
Serves 4
1.1 lb ground beef or beef + pork
0.4 cup dried breadcrumbs
0.6 cup regular milk
1 onion
1 carrot
1 tablespoon dried thyme
salt, pepper
1 egg
Decoration:
5 oz streaky bacon, sliced
4 inches leek
0.4 cup fresh lingonberries
(or cranberries)
For serving:
potato wedges or boiled potatoes
salad
Preheat oven to 392F.
Mix breadcrumbs and milk and leave to swell for 5 minutes.
Peel and grate onion and carrot and add that together with the ground meat, dried thyme, salt and pepper. Blend well and stir in the egg. Shape to a loaf and place in a paper-lined roasting pan. Bake in the middle of the oven for 40 minutes or until the inner temperature is 154F.
Topping:
Fry the bacon until crisp. Drain on paper towels. Thinly slice the leek. Decorate the meat loaf with crisp bacon, lingonberries and leek and serve with potatoes and a salad.
