KASSLER ON A RICE BED
Kassler på risbädd
Serves 4
0.8 cup long-grained rice
0.4 cup chopped parsley
1.1 lb kassler (warm-smoked,
boneless loin of pork)
10 slices cheese
Sauce:
½ onion
2 tablespoons butter or margarine
1 red bell pepper
1 teaspoon paprika
2 tablespoons flour
0.8 cup heavy cream
0.8 cup regular milk
1 tablespoon concentrated veal fond

For serving:

Preheat oven to 437F.
Boil the rice, blend in the parsley and put the rice in a greased, oven-proof pan. Slice the kassler. Alternate kassler and cheese and put it on top of the rice. Peel and chop the onion and sauté until tender in butter in a saucepan. Trim and shred the bell pepper and sauté with the onion for a couple of minutes. Add paprika and flour and stir. Dilute with cream, milk and veal fond and boil for 5 minutes. Flavor to taste with pepper.
Pour the sauce over the kassler and bake in the oven for about 20 minutes. Serve with a salad.
