Lemon Cake with Strawberries - Citronkaka med jordgubbar

LEMON CAKE WITH STRAWBERRIES
Citronkaka med jordgubbar

1 cake, 8 to 10 pieces

Cake:
5.3 oz almonds
7 oz cold, boiled potatoes
fresh juice from 1 lemon
2 eggs
0.8 cup sugar
0.3 cup liquid margarine

Creme:
0.4 cup regular milk
½ tablespoon Maizena
1 tablespoon sugar
½ teaspoon grated lemon zest
1 egg yolk

Decoration:
strawberries, fresh or frozen


Preheat oven to 347F.

Grease and flour a baking pan with a capacity of 6 cups. 

Skin and grind the almonds (or buy "ready-made") and grate the potatoes. Beat eggs and sugar until fluffy. Add almonds, potatoes, lemon zest and margarine. Blend well and pour the batter into the pan. Bake until nicely colored, about 45 minutes. 

Creme:
Pour milk, sugar and Maizena in a saucepan. Bring to a boil while stirring until the mixture thickens. Remove from heat and add grated lemon zest and egg yolk.

Spread the creme on the cooled cake and decorate with strawberries. Store this cake in the fridge. It also freezes well.
