LOVELY FILLED RHUBARB CAKE
Rabarberkaka med god fyllning
Serves 8
Cake:
1.2 cups flour
4.4 oz butter
2 tablespoons powdered sugar
1 egg
Filling 1:
7 oz rhubarbs
0.2 cup sugar
2 tablespoons water
Filling 2:
0.6 cup hazelnuts
2 eggs
2½ oz sugar
1.7 oz room-tempered butter
2 tablespoons flour
some ground cardamom
powdered sugar
For serving:
vanilla sauce
Preheat oven to 347F.
Cake:
Work flour, butter, powdered sugar and egg to a dough. Flatten it out in a pie pan, diameter approx 9 inches, and store cold for an hour. Pre-bake for 10 minutes.
Filling 1:
Split the rhubarbs lengthwise and put in a pan. Sprinkle with sugar and water and bake in the oven for 10 minutes.
Filling 2:
Finely mix the hazelnuts. Beat together eggs and sugar and blend in the nuts. Beat in the butter, flour and cardamom and pour the filling in the pie pan.
Put on the rhubarb pieces and bake for 30 minutes. Sift with powdered sugar and serve with vanilla sauce.
