OVEN-BAKED FILLET OF PORK WITH PORT SAUCE
Gratinerad fläskfilé med portvinssås
Serves 4
1 fillet of pork, approx 1 lb 5 oz
2 tablespoons butter
salt, black pepper
Baking:
4.4 oz mozzarella cheese
1 bunch basil leaves
1 oz pine nuts
2.6 oz sundried tomatoes,
marinated and shredded
2 garlic cloves, chopped
some salt
some pepper
Sauce:
1.6 cups water and pan juices
2 tablespoons concentrated
chicken fond
3 tablespoons Maizena
1 teaspoon Chinese soy sauce
2 tablespoons red port
black pepper
For serving:
green beans
Preheat oven to 437F.
Trim the fillet and brown all around in a frying pan with butter. Flavor with salt and pepper, take it up and wrap it up in aluminum foil.
Pour 0.8 cup water in the pan and strain into a saucepan. Bring to a boil together with chicken fond. Beat in the thickening, simmer the sauce for a few minutes and flavor to taste with soy sauce, port and pepper.
Finely dice the mozzarella and roughly chop the basil leaves. Mix mozzarella, basil, pine nuts, sundried tomatoes and garlic and add salt and pepper. You can prepare ahead this far.
Cut the fillet in approx 1/3 inch slices and place them in an oven-proof dish or pan. Spread the mozzarella mix over the whole fillet, place the pan in the oven and cook until the cheese has melted, about 15 minutes.
Serve with roast potatoes and green beans.
