PEAR APPLE CAKE WITH CHOCOLATE CREAM

Serves approx 6
2 pears
2 apples
2 eggs
0.4 cup sugar
0.8 cup creme fraiche
0.2 cup flour
1 teaspoon vanilla sugar
1 oz pine nuts
0.8 cup heavy cream
5 pieces of mint chocolate,
e.g. After Eight
some Swedish sweet arrack punsch (optional)
(a very sweet - and strong! - alcoholic
drink, which is great on vanilla ice cream
among other things!)
Preheat oven to 392F.
Beat eggs and sugar until really light and fluffy. Mix flour with vanilla sugar and stir it into the egg batter together with creme fraiche. Stir until smooth.
Peel, core and cut each fruit in about ½ inch thick wedges and place them in a greased, oven-proof pan. Spread the batter over the fruit and sprinkle with pine nuts. Bake in the middle of the oven for about 20 minutes or until the cake is nicely colored and dry when tested.
Beat the cream and chop the chocolate. Stir it in together with the optional sweet arrack punsch. Serve lukewarm together with the chocolate cream. Decorate with some lemon balm or fresh mint, if you wish.
