Quick Plum Cake - Hastkaka med plommon

QUICK PLUM CAKE
Hastkaka med plommon

1 cake, approx 8 pieces

2.8 cups flour
1 tablespoon baking powder
1 teaspoon ground cardamom
½ cup sugar
1.7 oz butter
1 egg
1 cup regular milk
9 plums
crushed nib sugar (or maybe
it's called loaf sugar)


Preheat oven to 392F.

Mix flour, baking powder, cardamom and sugar in a bowl and finely crumble the butter into the mixture. Stir in egg and milk and quickly blend to a dough. Spoon up the batter into a greased baking pan.

Split, core and cut the plums in wedges and put them over the surface. Sprinkle with crushed nib sugar and bake for 30 minutes. Serve straight away, it's best right from the oven.
