RASPBERRY COUPOLE

Serves 4 to 6
1.2 cups cream
approx 2 cups raspberries
0.2 to 0.4 cup sugar
4 gelatin sheets, soaked in
cold water
or 2 teaspoons gelatin powder
Decoration:
raspberries
lemon balm
whipped Cream
Process the raspberries in a mixer or food processor. If you wish to remove the seeds, push the puré through a sieve. You need approx 0.8 cup raspberry puré. Beat the cream until foamy and blend in the raspberries plus sugar to taste.
Squeeze out excess liquid from the soaked gelatin sheets, or do as you normally do with the powder. Beat the gelatin into the raspberry cream. Pour the batter in a serving bowl or a serving plate if you wish to unmould the mousse. Put in the fridge for a few hours or overnight.
Unmould the mousse or decorate it in the bowl with raspberries and lemon balm.
