ALMOND-BAKED APRICOTS
Mandelgratinerade aprikoser
Serves 6
1½ cans apricot halves, each whole
can approx 14 oz
2 large eggs
0.4 cup sugar
4 bitter almonds
0.8 cup creme fraiche
2 tablespoons flour
1 teaspoon vanilla sugar
1.7 oz flaked almonds
Decoration:
powdered sugar
For serving:
whipped cream or vanilla sauce
Preheat oven to 392F.
Drain the apricot halves and place in a greased pie pan (or 6 small pie pans). Beat eggs and sugar until fluffy. Grate the bitter almonds and blend them in. Stir in creme fraiche, flour and vanilla sugar and pour this batter over the apricots. Sprinkle with flaked almonds and bake for 20 minutes.
Sift with powdered sugar and serve with whipped cream or vanilla sauce.
