Almond Cake with Fruit - Mandelkaka med frukt

ALMOND CAKE WITH FRUIT
Mandelkaka med frukt

1 cake, approx 10 pieces

10.6 oz almond paste
3½ oz butter or margarine
3 eggs
0.6 cup flour
½ teaspoon baking powder
1 teaspoon vanilla sugar
approx 8 plums or 3 apples
powdered sugar


Preheat oven to 347F.

Roughly grate the almond paste. Add butter or margarine and stir together. Add eggs one by one while beating vigorously. Mix flour with baking powder and vanilla sugar. Stir it into the batter and continue stirring until you have a smooth mixture. Dab it out in a greased, floured springform pan, diameter approx 9 inches.

Peel and trim the fruit and dice it. Sprinkle over the cake and bake in the middle of the oven for 35 to 45 minutes, or until the cake comes out dry and is nicely colored. Allow to cool slightly before unmoulding and is allowed to cool completely. Sift with some powdered sugar just before serving with some whipped cream, flavored with some liqueur if you wish.
