ALMOND FROMAGE WITH STRAWBERRIES

Serves 4

1½ gelatin sheets
or 0.75 teaspoon powdered gelatin
5.3 oz almond paste
0.4 cup exotic fruit juice
2 egg yolks
1½ tablespoons sugar
0.4 cup heavy cream
2 cups strawberries
1 lime
2½ tablespoons sugar


Soak the gelatin sheets in cold water for about 5 minutes, or do as you normally do with the powder. Grate the almond paste. Bring 0.3 cup of the fruit juice to a boil. Add the grated almond paste and remove from heat. Stir until melted. Squeeze out excess liquid from the gelatin and stir into the almond paste to melt. Leave to cool.

Beat the egg yolks with remaining juice and sugar. Beat the cream until stiff. Stir the egg yolk mixture into the almond paste, add the cream and stir until well blended. Distribute the fromage in 4 serving glasses and store cold to set for a few hours or overnight.

Cut the strawberries in pieces. Grate the zest off the lime. Mix lime zest and sugar and sprinkle over the strawberries. Serve like in the picture.
