STRAWBERRY COCONUT CREME BRUSCHETTA
Jordgubbsbruschetta med kokoskräm
Serves 4
6 slices Pound cake, lemon or
vanilla flavored
5.3 oz mascarpone cheese
or Philadelphia cream cheese
0.2 cup coconut milk
grated zest from 1 lime
0.2 cup powdered sugar
0.2 cup flaked coconut
strawberries
fresh mint
Stir the cheese with coconut milk. Add powdered sugar, grated lime zest and coconut. Stir to a smooth mixture. Quickly grill the cake slices, just a minute or so. Spread with the coconut creme. Trim and slice the strawberries and distribute them on top of the creme. Sprinkle with shredded, fresh mint and serve with some ice cream.
