Angel Pie - Änglapaj

ANGEL PIE
Änglapaj

Serves 8

6 egg whites
1/4 teaspoon salt
1.4 cups sugar
1 teaspoon vanilla sugar
1 tablespoon white wine vinegar

For serving:
1.2 cup heavy cream
4 cups strawberries
some redcurrants


Preheat oven to 302F.

Beat the egg whites and salt until stiff and foamy. Add sugar, little by little, while beating. Beat in the vanilla sugar and vinegar while beating.

Line a round springform pan, diameter approx 9 inches, with baking paper. Grease and flour the pan well. Spoon in the meringue in dabs and bake for 1 hour. The meringe will puff up and crackle. Allow to cool.

Beat the cream and spread it on the meringue. Decorate with the berries on top and leave in a cold place for 1 hour before serving.
