FESTIVE KASSLER
Festlig kassler

Serves 4

4 servings boiled rice
7 oz mushrooms
1 tablespoon butter or margarine
salt, pepper
8.8 oz green asparagus
10 cherry tomatoes
1.1 lb kassler (warm-smoked,
boneless loin of pork)
0.2 cup chopped parsley
0.4 cup mayonnaise
2 egg yolks
1 tablespoon white wine vinegar
0.8 cup grated cheese
2 egg whites

Decoration:
parsley

For serving:
tomatoes


Preheat oven to 437F.

Spread out the boiled rice in the bottom of a greased, oven-proof pan. Slice the mushrooms and fry it in butter in a frying pan. Flavor with salt and pepper. 

Break off and discard the bottom part of the asparagus stems. Cut the rest in pieces and boil in lightly salted water for 3 minutes. Put asparagus, mushrooms and split tomatoes on top of the rice together with sliced kassler. Sprinkle with parsley.

Mix mayonnaise, egg yolks, vinegar and cheese. Beat the egg whites until stiff and gently blend it in with the mayonnaise. Spread this over the meat and bake until nicely colored, about 15 minutes. 

Decorate with parsley and serve with tomatoes.
