APPLE-BAKED PORK CHOPS WITH CURRY SAUCE

Serves 2
2 pork chops
salt, black pepper
2 teaspoons butter or margarine
1 small apple
0.2 cup grated cheese
Curry sauce:
1 teaspoon curry
2 tablespoons onion
1 tablespoon butter or margarine
1 tablespoon flour
0.4 cup water
0.4 cup cooking cream
1 tablespoon concentrated chicken fond
salt, pepper
For serving:
boiled rice
boiled broccoli and cauliflower
The meat should be room-tempered. Wipe it off, make some cuts in the rind and flavor with salt and pepper. Fry for about 2 minutes on each side and transfer to an oven-proof pan.
Rinse and roughly grate the apple and mix with the cheese. Put this over the meat and bake high up in the oven for about 5 minutes.
Curry sauce:
Sauté curry and chopped onion in a saucepan with the fat. Add flour and stir. Dilute with water, cream and chicken fond. Bring to a boil while stirring and let the sauce simmer for 3 minutes. Flavor to taste with salt and pepper.
Serve the pork chops with rice and boiled vegetables.
