CREAMY LEMON CHICKEN
Krämig citronkyckling
Serves 2
8.8 oz chicken fillets
1 tablespoon butter or margarine
½ onion
3½ oz cherry tomatoes
zest and juice from ½ lemon
1 tablespoon concentrated chicken fond
0.2 cup cooking cream
0.4 cup low-fat creme fraiche
0.2 cup chopped parsley
salt, pepper
For serving:
potato wedges
Cut the chicken in pieces and brown in butter. Peel and chop the onion and let it fry with the chicken. Split the tomatoes. Scrub the lemon, grate the zest and squeeze out the juice. Add fond, cream, creme fraiche, tomatoes, lemon zest, lemon juice and parsley in the pan and boil together for 5 minutes.
Flavor to taste with salt and pepper and serve with potato wedges from the oven.
