BLUEBERRY SUMMER DESSERT
Sommardessert med blåbär
Serves 4
0.4 cup Kesella (Swedish dairy product,
see an earlier post for more info)
0.8 cup cooking yogurt
1 teaspoon grated lemon zest
2 tablespoons cane sugar
0.4 cup low-fat creme fraiche
1 egg white
8.8 oz blueberries, fresh
or frozen and half-thawed
Decoration:
12 almonds
grated lemon zest
Mix Kesella (or cream cheese) and yogurt, grated lemon zest and half of the cane sugar. Divide the mixture in 4 serving bowls and place the berries on top. Beat the egg white until stiff and mix with creme fraiche and remaining cane sugar.
Divide the creme fraiche mixture over the berries and decorate with chopped or flaked almonds and grated lemon zest.
