Apple Cake with Lingonberries - Äppelkaka med lingon

APPLE CAKE WITH LINGONBERRIES
Äppelkaka med lingon

1 cake

7 oz butter or margarine
1 cup sugar
1 teaspoon vanilla sugar
4 eggs
1.6 cup flour
1 teaspoon baking powder
0.4 cup cooking yogurt
2 apples
1 teaspoon ground cinnamon
0.2 cup lingonberries
stirred with sugar (as whole
as possible)

Decoration:
powdered sugar


Preheat oven to 347F.

Stir butter and sugar until really light and fluffy. Add the eggs, one by one, while beating vigorously. Mix flour with baking powder and vanilla sugar and stir it into the batter together with yogurt. Stir until smooth. Peel, core and dice the apples. Mix with cinnamon.

Pour approx half of the batter in a greased, floured springform pan, diameter approx 9 inches. Place half of the apples on top and half of the berries on top of them. Spread remaining batter over the filling and place remaining apple and berries on the surface. Make holes to press the apples down a little. 

Bake in the middle of the oven for 50 to 60 minutes or until the cake is nicely colored and done. Leave in the pan for a couple of minutes before unmoulding and is allowed to cool completely.

The cake freezes well.
