GROUND MEAT PATTIES AU GRATIN
WITH BACON AND TOMATOES
Gratinerade färsbiffar med bacon och tomat
Serves 4
1.1 lb ground meat, beef + pork
or what you prefer
0.2 cup dried breadcrumbs
0.3 cup water
1 egg
1 teaspoon salt
some black pepper
2 tablespoons finely chopped parsley
5 oz streaky bacon, sliced
2 tomatoes
0.4 cup strong, grated cheese
fresh herbs for decoration
Mix water and breadcrumbs and leave to swell for about 5 minutes. Blend in the ground meat, egg, spices and parsley. Shape the mixture to 8 plump patties. Wrap a bacon slice around each. Slice the tomatoes. Place the patties in a greased, oven-proof pan, put a tomato slice on each and sprinkle with grated cheese. Bake at 437F just below the middle of the oven for 25 to 28 minutes.
Decorate with green herbs and serve the patties with rice or potatoes and perhaps a cream sauce.
