BANANA CAKE WITH LIME CREME
Banankaka med limekräm
1 cake, 10 to 12 pieces
3½ oz butter
0.8 cup sugar
2 eggs
1.4 cup flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1 tablespoon ground cinnamon
3 ripe bananas
1 tablespoon sugar
Lime creme:
0.8 cup low-fat creme fraiche
0.4 cup powdered sugar
grated zest from 1 lime
fresh juice from 1 lime
flaked coconut
Decoration:
grated lime zest
Preheat oven to 347F.
Stir butter and sugar until light and fluffy. Add the eggs, one by one, while stirring vigorously. Mix flour with baking powder, bicarbonate of soda and cinnamon. Stir it into the batter. Mash the bananas with 1 tablespoon sugar and blend the banana mash into the batter. Stir until smooth. Pour in a greased, floured springform pan, diameter approx 9 inches, and bake in the lower part of the oven for about 45 to 55 minutes or until the cake is done. Allow to cool completely.
Mix together all ingredients for the lime creme. Spread it over the cake and decorate with lime zest. Store cold for about 30 minutes before serving.
