Beef Stew with Apple Salad - Köttgryta med äppelsallad

BEEF STEW WITH APPLE SALAD
Köttgryta med äppelsallad

Serves 4

1.1 lb shredded beef
1 tablespoon liquid margarine
1 tablespoon flour
1.2 cups meat bouillon
0.4 cup red wine
2 onions
4 garlic cloves
1 rosemary sprig
salt, pepper
2 carrots
1 piece celeriac (celery-root)

Apple salad:
1 apple
lemon
2 carrots
2 tablespoons walnuts
oil

For serving:
couscous


Brown the shredded meat in liquid margarine, add flour and stir. Pour on bouillon and red wine. Cut the onions in wedges and add them to the meat. Split the garlic and add it. Flavor with rosemary, salt and pepper. Add peeled, whole carrots and pieces of peeled celeriac. Simmer for about 1 hour. Take up the carrots and slice before serving.

Cut the apple in wedges and drizzle with lemon juice. Grate the carrots. Mix apple and carrots in a bowl. Roughly chop up the walnuts and sprinkle them over the salad. Splash over some oil.
