BELL PEPPER CHILI CHICKEN

Serves 4
14 oz chicken breast fillet
0.8 cup whole-grain rice
(hope that's the right name for it)
1 teaspoon salt
1 red bell pepper
2 spring onions
1 tablespoon butter or margarine
0.8 cup low-fat creme fraiche,
preferably bell pepper/chili flavored
if you can get hold of that
Boil the rice. Shred the chicken and flavor with salt. Trim and chop the bell pepper. Finely shred the spring onion. Brown the chicken in the fat in a frying pan. Stir in the creme fraiche and boil for 2 to 3 minutes. Sprinkle with the bell pepper and spring onions and serve with rice.
