Juicy Plum Cake - Saftig plommonkaka

JUICY PLUM CAKE
Saftig plommonkaka

1 cake

4.4 oz butter
0.4 cup cane sugar
5 plums
0.8 cup sugar
2 eggs
1.2 cup flour
1½ teaspoon baking powder
1½ teaspoon vanilla powder
(not the same as vanilla sugar)
0.8 cup regular milk
0.8 cup creme fraiche


Preheat oven to 347F. 

Melt 1.7 oz butter and mix with cane sugar. Cover the bottom of a baking pan, preferably a springform pan with a diameter of about 9 inches, with this mixture. Split the plums, remove the stones, cut them in pieces and spread out in the bottom of the pan. The pattern you make here will later be the surface of the cake. 

Beat 3½ oz butter until fluffy with the sugar and add the eggs, one by one. Mix flour, baking powder and vanilla powder and stir this into the batter together with milk. Pour over the plums and even out the surface. Bake in the lower part of the oven for about 45 minutes.

Allow the cake to cool in the pan for about 20 minutes and unmould on a plate. Serve with a dab of creme fraiche.
