BLUEBERRY PANCAKE WITH COTTAGE
CHEESE CREAM
Blåbärspannkaka med kesogrädde
Serves 6
1 cup flour
0.2 cup wheat bran
2 teaspoons sugar
½ teaspoon salt
2 cups regular milk
3 large eggs
2 tablespoons butter
4.4 oz blueberries
0.2 cup sugar
For serving:
8.8 oz cottage cheese
0.8 cup whipped cream
lemon balm
powdered sugar
Preheat oven to 437F.
Mix flour and wheat bran in a bowl and add sugar, salt and half of the milk. Beat to a smooth mixture. Add remaining milk and eggs.
Divide the batter in 6 greased serving dishes. Sprinkle with blueberries and sugar and bake the pancakes in the middle of the oven, approx 20 minutes, until nicely colored.
Serve with cottage cheese mixed with whipped cream. Decorate with lemon balm and sift lightly with powdered sugar.
