BELL PEPPER-BAKED CHICKEN FILLETS
Paprikagratinerad kycklingfilé
Serves 4
4 chicken fillets
salt, pepper
Bell pepper sauce:
2 grilled, canned bell peppers
0.8 cup creme fraiche
1 tablespoon chopped thyme
1 tablespoon chopped parsley
0.4 cup cashew nuts
2.7 oz ripe cheese
For serving:
boiled rice
salad
Preheat oven to 437F.
Wipe off the chicken and place it in a greased, oven-proof pan. Sprinkle with salt and pepper.
Sauce:
Mix the grilled canned bell peppers, creme fraiche, thyme, parsley, cashew nuts and cheese in a food processor.
Spread the sauce over the chicken and bake in the middle of the oven for about 25 minutes. Serve with a salad and boiled rice.
