BLUEBERRY WHITE CHOCOLATE PASTRIES
Blåbärsmusslor med vit choklad
30 pastries
4.4 oz almonds
7 oz room-tempered butter
0.6 cup sugar
1 egg
1.6 cup flour
Chocolate filling:
1.7 oz blueberries
0.8 cup cream
2.7 oz white chocolate
0.8 cup cream
Preheat oven to 347F.
Quickly mix all ingredients to a dough. Thumb it out in small, wrinkled pastry tins (you can see in the picture). Bake in the middle of the oven for about 8 minutes. Gently loosen the pastry shells from the tins.
Bring the cream to a boil for the filling and pour it over the chocolate, broken in pieces. Stir until the chocolate has melted. Add remaining cream and blueberries and cover with plastic foil. Store the chocolate filling in the fridge overnight.
Beat the filling until foamy and fill the pastry shells. Decorate with fresh raspberries or other berries.
