CHICKEN STEW WITH MANGO
Kycklinggryta med mango
Serves 2
10.6 oz chicken fillets
1 tablespoon butter or margarine
salt, pepper
0.4 cup water
1 tablespoon concentrated
chicken fond
½ teaspoon sambal oelek
a 4-inch piece of leek
1 tablespoon mango chutney
0.4 cup low-fat creme fraiche
2.6 oz frozen mango
For serving:
rice
tomatoes
avocado
Cut the chicken in pieces and brown all around in a frying pan with butter. Flavor with salt and pepper. Add water, chicken fond, sambal oelek, shredded leek, mango chutney and creme fraiche. Simmer slowly for 5 minutes.
Add mango and bring to a boil. Flavor to taste and serve with rice, tomatoes and avocado.
