Potato Carrot Soup - Potatis- och morotssoppa

POTATO CARROT SOUP
Potatis- och morotssoppa

Serves 2

3 potatoes
3 carrots
1 onion
1 tablespoon butter or margarine
1 vegetable bouillon cube
2.4 cups water
0.4 cup cooking cream
salt, pepper

Cream cheese shrimp mix:
2.6 oz peeled shrimp
2 tablespoons low-fat cream cheese
1 tablespoon dill

For serving:
bread


Peel and dice potatoes and carrots. Peel and chop the onion. Sauté potatoes, carrots and onion in a pot for a few minutes without coloring. Add bouillon cube and water and boil for 15 minutes until everything is tender. Mix the soup until smooth and flavor to taste with salt and pepper.

Cream cheese shrimp mix:
Stir together shrimp, cream cheese and dill and serve in the soup or on a piece of bread.
