CHICKEN WITH PARMESAN
Bjudkyckling med parmesanost

Serves 4

1 lb 5 oz chicken fillets
1 onion
1 garlic clove
2 tablespoons butter or margarine
½ teaspoon sugar
5.3 oz grated Parmesan cheese
1.2 cup heavy cream
0.4 cup fresh basil leaves
salt, pepper
3½ oz baby plum tomatoes

For serving:
rice
salad


Preheat oven to 392F.

Peel, split and slice the leek. Peel and chop the garlic. Sauté it all in butter in a frying pan. Flavor with sugar, salt and pepper.

Split each chicken fillet lengthwise and put them in a row in a greased oven-proof pan. Flavor with salt and pepper. 

Mix Parmesan cheese and cream and pour this over the chicken. Put on the leek and last shredded basil. Bake in the oven for about 30 minutes until the chicken is done. Sprinkle with split tomatoes and serve with rice and a salad.
